Ingredients:
- For the tortellini:
- 1 pound pasta dough
- 1-pound cooked lobster meat, finely chopped
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 1/2 cup white wine
- 2 tablespoons tomato paste
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon fresh thyme leaves, finely chopped
- 1 egg yolk
- 1 tablespoon unsalted butter
- Salt and black pepper to taste
- For the seafood broth:
- 20 mussels
- 20 clams
- 1/2 cup white wine
- 1/2 onion, sliced
- 1 fennel bulb, sliced
- 4 cups of water
- 1 teaspoon fresh thyme leaves, finely chopped
- Salt and black pepper to taste
Instructions:
Step 1: Make the lobster filling. Heat olive oil in a pan and add finely chopped onions. Cook until they are soft and translucent. Add tomato paste and mix well.
Step 2: Pour in the white wine and let it simmer for 2-3 minutes. Add finely chopped cooked lobster meat and stir well. Season with salt and black pepper. Cook for another 5-6 minutes on low heat. Finally, add finely chopped parsley and thyme leaves. Remove from heat and let it cool completely.
Step 3: Prepare the pasta dough. Roll out the pasta dough into thin sheets. Cut the sheets into circles with a cookie cutter or a sharp knife. Place a small amount of lobster filling in the center of each circle. Brush the edges of the circle with egg yolk. Fold the dough over the filling creating a half-moon shape. Press the edges of the dough together to seal the tortellini.
Step 4: Make the seafood broth. In a large pot, pour 4 cups of water and add the sliced fennel bulb, sliced onion, and thyme leaves. Bring it to a boil and reduce the heat to low. Add the mussels and clams. Cover the pot and let it simmer for 3-4 minutes. Once the shellfish opens up, remove them from the pot and strain the broth.
Step 5: Cook the tortellini. In a separate pot, bring salted water to a boil. Add the tortellini to the boiling water and cook for 2-3 minutes or until they float to the surface. Drain the water and toss the tortellini in unsalted butter.
Step 6: Serve. Pour the strained seafood broth into a serving bowl. Add the cooked tortellini and shellfish. Garnish with finely chopped parsley and thyme leaves. Serve hot.
