  1. Begin by making the filling for the ravioli. In a mixing bowl, mix the cooked and chopped lobster meat with 1/4 cup of the heavy cream, salt, and pepper to taste. Set aside.
  2. Take a wonton wrapper and put one tablespoon of filling in the center. Wet the edges with water and fold over to make a triangle. Seal the edges well and set aside. Repeat until all the filling is used.
  3. In a large pot of boiling water, cook the ravioli for 3-4 minutes or until they float to the surface. Drain and set aside.
  4. While the ravioli is cooking, make the sauce. In a large skillet, melt 1 stick of unsalted butter over medium heat. Add minced shallot and saute for 2-3 minutes until soft.
  5. Add 1/2 cup of white wine and let it reduce by half. Add 3/4 cup of heavy cream and let it simmer for 5-7 minutes.
  6. Add 1/2 lemon, juiced and zested, and 1/4 cup of chopped parsley. Season with salt and pepper to taste.
  7. Serve the ravioli with the lemon butter sauce on top.

This recipe serves 4-6 people and takes about 45 minutes to prepare.
