  1. Preheat the oven to 450 degrees F.
  2. Plunge the lobsters headfirst into the boiling water and cook for 8 minutes.
  3. Remove the lobsters to a large bowl and let them cool.

  5. Using kitchen shears, cut the shells off the tails and remove the tail meat. Reserve the shells, discarding the tomalley, the coral, and any loose shell. Cut the lobster meat into 1/2-inch dice and refrigerate, covered.
